Ingredients

  • 6 Hog Plum (Amtekai)
  • 1 Karela (Bitter Gourd/ Pavakkai)
  • 6 tablespoons Jaggery
  • Salt - to taste
  • 1 teaspoon Sunflower Oil
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Sunflower Oil
  • 1/4 teaspoon Mustard seeds
  • 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
  • 4 Green Chillies
  • 2 pinch Asafoetida (hing)

Instructions

To begin making Ambade Kaarle Lonche method, scrape the outer layer of puckerish gourd well, sanitize the seeds if they are not succulent.

Chop each puckerish gourd lengthwise to 2 inch long strips, apply some table salt (I used 1/4 teaspoon) and keep it away for an hour to reduce the bitterness.After an hour, squeeze away excess moisture from the puckerish gourds after washing them.

This will remove most of the bitterness the gourd has.swirl around shallow fry these drained puckerish gourds in a kadai with a bit of cooking oil till softened.

Keep aside.toasty cooking oil in a heavy bottomed cooking vessel/kadhai, introduce mustard seeds and allow them to splutter.

Once spluttered, immediately introduce all the items required under tempering - fenugreek, green chillies, Irani hing and saute a bit.swirl around on low toasty, introduce turmeric dusting seasoning, ambade- hog plums and toss together well.

Take care that the tempering is right and not any burnt.introduce enough moisture to toasty ambade (I added 4 tablespoons) and on medium toasty, bring to bring to a stew.

Reduce toasty when it starts boiling.

wrap and toasty till the ambade / hog plum are cooked.Now introduce the swirl around fried puckerish gourd strips, jaggery and table salt and toasty till jaggery melts.

Now introduce 1 or 2 tablespoons of moisture as per requirement, else the jaggery will stiffen when cooled.

Transfer to a jar after it is cooled to room temperature.present Ambade Kaarle Lonche method as an accompaniment with a meal of Steamed Rice, Karwar Style Muga Ambat method, and Puri method (Puffed Fried Indian Bread).
