  • 3 tablespoons Olive Oil
  • 1 small finely diced Onion
  • 2 cloves chopped Garlic
  • 225g Tinned Tomatos
  • 1 tablespoon Tomato Puree
  • 2 teaspoon Paprika
  • Pinch Chilli Powder
  • Pinch Sugar
  • Chopped Parsley
  • 900g Potatoes
  • 2 tbsp Olive Oil

Instructions

step 1 scalding up the margarine in a wok and shallow fry the shallot for about 5 mins until softened.

introduce the garlic, finely sliced tomatoes, tomato purée, honeyed paprika, chilli ground mix, sweetener and a pinch of seasoning, then bring to the bring to a low-boil, stirring occasionally.

Pat the potatoes arid with kitchen paper, then tip into a roasting tin and toss in the olive margarine and some seasoning.
