1 tablespoon Olive Oil
1 Large Chopped Onion
2 Cinnamon
500g Lamb
250g Basmati Rice
1 Lamb Stock
12 Dried Apricots
Handful Mint
Instructions

dehydrated-shallow fry the pine nuts or almonds in a large wok until lightly toasted, then tip onto a plate.

empty in the oil to the wok, then shallow fry the bulb veggie and cinnamon together until starting to turn golden.

Turn up the bring to temperature, mix gently in the lamb, shallow fry until the flesh changes colour, then tip in the rice and bake for 1 min, stirring all the time.

empty in 500ml boiling moisture, crumble in the stock cube, empty in the apricots, then masala condiment to palate.

Turn the bring to temperature down, wrap and stew for 12 mins until the rice is soft and the stock has been absorbed.

Toss in the pine nuts and mint and enjoy.
