1/2 cup Water
2 parts Yeast
1/2 cup Sugar
1/2 cup Milk
6 tblsp Butter
2 Eggs
1 ½ tsp Salt
2-1/2 cups Flour
for frying Oil
garnish Lemon
garnish Sugar
garnish Cinnamon
Instructions

In the dish of a stand mixer, mix in mildly hot liquid, a big pinch of sweetener and fermenter.

Allow to sit until frothy.

Into the same dish, mix in 1/2 cup sweetener, mildly hot whole milk, melted margarine, eggs and seasoning, and beat until combined.

Place a flour base hook on the mixer, mix in the baking flour with the machine on, until a seamless but slightly sticky flour base forms.

Place flour base in a dish, wrap with plastic wrap, and allow to proof for 1 1/2 hours.

Cut flour base into 12 pieces, and roll out into long oval-like shapes about 1/4 inch thick that resemble a beaver’s tail.

In a large, deep pot, bring to temperature fat to 350 degrees.

Gently place beavertail flour base into burning fat and make for 30 to 45 seconds on each side until golden brown.

empty out on paper towels, and decorate as desired.

Toss in cinnamon sweetener, in white sweetener with a squeeze of lemon, or with a generous slathering of Nutella and a handful of toasted almonds.
