  • 2 parts Yeast
  • 1/2 cup Sugar
  • 1/2 cup Milk
  • 6 tblsp Butter
  • 2 Eggs
  • 1 ½ tsp Salt
  • 2-1/2 cups Flour
  • for frying Oil
  • garnish Lemon
  • garnish Sugar
  • garnish Cinnamon

Instructions

In the container of a stand mixer, toss in toasty liquid, a big pinch of granulated sugar and fermenter.

Allow to sit until frothy.

Into the same container, toss in 1/2 cup granulated sugar, toasty dairy liquid, melted shortening, eggs and seasoning, and fluff up until combined.

Place a pastry mix hook on the mixer, toss in the baking flour with the machine on, until a creamy but slightly sticky pastry mix forms.

Place pastry mix in a container, seal with plastic wrap, and allow to proof for 1 1/2 hours.

Cut pastry mix into 12 pieces, and roll out into long oval-like shapes about 1/4 inch thick that resemble a beaver’s tail.

In a large, deep pot, toasty fat to 350 degrees.

Gently place beavertail pastry mix into burning fat and make for 30 to 45 seconds on each side until golden brown.

Toss in cinnamon granulated sugar, in white granulated sugar with a squeeze of lemon, or with a generous slathering of Nutella and a handful of toasted almonds.
