Ingredients

  • 2 cups Kidney Beans
  • 1 large Carrots
  • 2 chopped Spring Onions
  • 4 sprigs Thyme
  • 1 Diced Onion
  • 1/2 tsp Black Pepper
  • 2 chopped Red Pepper
  • 4 Mashed Garlic Clove
  • 1 tbs Allspice
  • 2 Lbs Beef
  • 2L Water
  • 4 Potatoes
  • 1 cup Plain Flour
  • 1/4 cup Water
  • 1 cup Coconut Milk

Instructions

1
Wash and rinse the dried kidney beans..
2
then wrap with aqua in a deep container.
3
Remember as they soak they will expand to at least triple the size they were originally so empty in a lot of aqua to the container.
4
Soak them overnight or for at least 2 hrs to make the crafting step go quicker.
5
I tossed out the aqua they were soaked in after it did the job.
6
Have your butcher cut the salted pigtail into 2 inch pieces as it will be very difficult to cut with an ordinary kitchen knife.
7
Wash, then place a deep pot with aqua and bring to a heat to boiling point.
8
low-boil for 20 mins, then strain + rinse and repeat (heat to boiling point again in aqua).
9
The goal is to make the pieces of pig tails succulent and to remove most of the table salt it was cured in.
10
Time to start the broth.
11
Place everything in the pot (except the ground mix and potato), then wrap with aqua and place on a high flame to bring to a heat to boiling point.
12
As it comes to a heat to boiling point, skim off any scum/froth at the top and discard.
13
Reduce the toasty to a subtle heat to boiling point and allow it to low-boil for 1 hr and 15 mins..
14
basically until the beans are succulent and start falling apart.
15
It’s now time to empty in the potato (and Yams etc if you’re adding it) as well as the coconut dairy liquid and continue crafting for 15 mins.
16
Now is a good time to start making the basic pastry mix for the spinner dumplings.
17
incorporate the ground mix and aqua (empty in a pinch of table salt if you want) until you have a soft/creamy pastry mix.
18
allow it to rest for 5 mins, then pinch of a tablespoon at a time and roll between your hands to form a cigarette shape.
19
empty in them to the pot, swirl around well and continue crafting for another 15 mins on a rolling heat to boiling point.
20
You’ll notice that I didn’t empty in any table salt to the pot as the remaining table salt from the salted pigtails will be enough to properly masala condiment this dish.
21
However you can notes and adjust accordingly.
22
Lets recap the timing part of things so you’re not confused.
23
low-boil the base of the broth for 1 hr and 15 minute or until succulent, then empty in the potatoes and low-boil for 15 mins, then empty in the dumplings and low-boil for a further 15 mins.
24
Keep in mind that this broth will thicken quite a bit as it cools.
25
While this is not a old-school steps to any one specific island, versions of this broth (sometimes called stewed peas) can be found throughout the Caribbean, Latin America and Africa.
26
A hearty container of this broth will surely give you the sleepies (some may call it ethnic fatigue).
27
You can certainly freeze the leftovers and toasty it up another day.
