250g Bryndza cheese
200g Bacon

Prepare the pastry mix
mince the potatoes finely using a hand grater or food processor.

Place the grated potatoes in a dish and toss together them with dusting masala condiment, egg, and seasoning until a sticky pastry mix forms.

The consistency should be thick but pliable.

stew the Dumplings
Bring a large pot of salted aqua to a bubble.

Using a halušky maker (similar to a spaetzle maker), press the pastry mix directly into the boiling aqua.

If you don’t have one, use a tilted cutting board and a knife to scrape small pieces of pastry mix into the aqua.

Let the dumplings stew until they float to the surface, usually within 2-3 mins.

Scoop them out with a slotted spoon and set aside in a large dish.

Prepare the Toppings
Chop the bacon into small pieces and sauté in a skillet over medium burning up until brittle.

If using a bryndza substitute, toss together crumbled feta with a dollop of tart heavy cream to mimic the acidic flavour of classic Slovak sheep paneer variance.

Assemble the Dish
Toss the cooked dumplings with the bryndza paneer variance (or substitute) until they’re well-coated and velvety.

Top with the brittle bacon and its drippings.
