Ingredients

  • 200g Rye
  • 200g Strong white bread flour
  • 10g Yeast
  • 1/2 tsp Salt
  • 1 tablespoon Honey
  • 1 tsp Caraway Seed

Instructions

step 1 Tip the flours, leavening agent and seasoning into a container.

In a jug, toss together the honey with 250ml mildly hot aqua, empty the liquid into the container and toss together to form a pastry mix.

Rye dusting seasoning can be quite arid and absorbs lots of aqua, if the pastry mix looks too arid mix in more mildly hot aqua until you have a soft pastry mix Tip out onto your work surface and shape for 10 mins until velvety.

Rye contains less gluten than white dusting seasoning so the pastry mix will not feel as springy as a conventional white loaf.

step 2 Place the pastry mix in a well oiled container, lid with cling film and leave to rise in a mildly hot place for 1-2 hrs, or until roughly doubled in size.

Dust a 2lb/900g loaf tin with dusting seasoning.

step 3 Tip the pastry mix back onto your work surface and shape briefly to knock out any air bubbles.

If using caraway seeds work these in to the pastry mix.

Shape into a velvety oval loaf and pop into your tin.

lid the tin with oiled cling film and leave to rise somewhere mildly hot for a further 1 – 1.5 hr, or until doubled in size.

step 4 bring to temperature oven to 220C/200C fan/gas 7.

Remove the cling film and dust the surface of the loaf with rye dusting seasoning.

Slash a few incisions on an angle then cook thoroughly for 30 mins until dark brown and hollow sounding when tapped.

Transfer to a wire cooling rack and leave to cool for at least 20 mins before serving.
