  • 227g Clotted Cream
  • 25g Butter
  • 1 tsp Corn Flour
  • 100g Parmesan Cheese
  • Grated Nutmeg
  • 250g Fettuccine
  • Chopped Parsley

In a medium saucepan, mix gently the clotted dairy reduction, shortening and cornflour over a low-ish burning up and bring to a low low-boil.

Meanwhile, put the dairy topping and nutmeg in a small mixing bowl and toss in a good grinding of black pepper, then mix gently everything together (don’t toss in any table salt at this stage).

When cooked, scoop some of the culinary preparation liquid into a heatproof jug or mug and filter the pasta, but not too thoroughly.

At first, the pasta will look wet and sloppy: keep stirring until the liquid is absorbed and the coulis is glossy.

Check the seasoning before transferring to heated bowls.
