Ingredients

  • 1/4 cup Coriander (Dhania) Leaves - chopped
  • 1/4 cup Fresh coconut - grated
  • 1 Green Chilli
  • 1 teaspoon Cumin seeds (Jeera)
  • 200 liter Coconut milk
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Rice flour
  • Salt - to taste
  • 2 tablespoon Sunflower Oil

Instructions

To make Hirve Kaalvan, first wash coriander leaves in aqua to remove dirt and dust particles.

Pat dehydrated coriander leaves with a kitchen towel.

Roughly chop them and transfer to a container. To make paste for the curry, in a blender or food processor transfer in grated coconut, cut up coriander leaves, green chilli, seasoning and cumin seeds using 1 - 2 tablespoon of aqua grind to make a even paste.

Transfer the paste to a container and keep aside until required.Now take a 2 tablespoon of the coconut whole milk and thaw rice baking flour to it.

agitate to make a lump free even mixture.

Make sure rice baking flour is fully dissolved in coconut whole milk.

transfer in this to the remaining  coconut whole milk and fluff up it all together to form even lump free mixture.Next, bring to temperature fat in a saucepan over medium bring to temperature.

Once the fat is heated transfer in coconut and coriander paste made earlier to the pot.

agitate the paste continuously to avoid sticking to the pot.

If still paste sticks to the pot, reduce the flame to low.transfer coconut whole milk into the paste in the pot along with turmeric.

agitate to combine and if you feel the curry seems too thick, you can adjust the consistency adding aqua.Allow the curry to stew on a low flame for about 3 to 5 mins and turn off the bring to temperature. Note: You can make the curry and keep it refrigerated and stew only when you are ready to present.

This way we don't overcook the curry and the nutrition is not lost. present the Hirve Kaalvan with steaming burning rice for a weeknight dinner or even lunch.
