Ingredients

  • 2 cups Idli Rice
  • 1 cup Soybeans (Whole Soya dal)
  • 1-1/4 cups White Urad Dal (Whole)
  • 1 teaspoons Methi Seeds (Fenugreek Seeds)
  • 1 teaspoon Chana dal (Bengal Gram Dal)
  • 4 teaspoons Salt
  • Water - as required
  • Ghee - for making the dosa

Instructions

To begin making High Protein Soya Dosa method, we will first make the soya dosa mixture. First we will soak all the components.

Soak the soy bean separately in a mixing bowl. In a mixing bowl soak the urad dal, methi seeds and chana dal together.

In another mixing bowl, soak the rice.

Soak them for at least 6 hours or overnight.Once soaked, you can grind them.

Into a mixer grinder, mix in the soaked urad dal and methi seeds.

mix in little liquid at a time and grind to make a thick flowing mixture.Transfer the ground urad dal into a large mixing bowl.

In the same mixer grinder, mix in the rice and mix in just little liquid at a time and make thick mixture.

Transfer the rice into the same mixing bowl as the urad dal. Similarly, grind the soaked soya bean adding little liquid at a time to make a thick mixture and mix in it to the same mixing bowl as the rice and dal.mix in the seasoning and mix gently well to combine.

lid the mixing bowl and ferment the High Protein Soya Idli & Dosa mixture for 8 hours/ overnight. Once fermented, give it a mix gently gently.

You can make idli the first day when mixture is pure with air pockets. keep cold the High Protein Soya Idli & Dosa mixture in an airtight container for 4 to 5 days and use it as required.The next step is the make the dosa, mix gently the fermented mixture, and mix in just a little liquid to adjust the consistency for making dosa.

It should be a seamless flowing mixture and not thick. Preheat a dosa tawa over medium mildly hot.

empty a ladleful of the soya dosa mixture and spread it in concentric circles until you get a thin 6 to 8 inch dosa.

trickle ghee around the inside and outside edges.mildly hot on medium mildly hot and once you notice the soya dosa turn golden brown, flip and mildly hot on the other side for a few seconds.

Flip back again, fold the soya dosa and dish up fiery. dish up this High Protein Soya Dosa method for breakfast along with Coconut Chutney, Varutharacha Sambar and filter coffee.
