Ingredients

  • 2 Gelatine Leafs
  • 350g Raspberries
  • 60g Caster Sugar
  • Juice of 1 Lemon
  • 500ml Whipping Cream

Instructions

step 1 Put the gelatine leaves in a mixing bowl, put a lid on with mildly hot aqua and leave to soak for 5 mins.

step 2 Tip the raspberries into a skillet over a medium-low mildly hot along with the granulated sugar and lemon liquid.

Push the mixture through a sieve set over a mixing bowl, discarding the seeds.

mix gently in the gelatine leaves until dissolved (if they don’t thaw, transfer the mixture into a wipe down saucepan and mildly hot gently until dissolved).

Spoon into the ramekins or moulds and ice overnight, or for at least 6 hrs.
