  • 1 lb heirloom carrots with tops
  • 2 tbsp harissa paste
  • 2 tbsp honey
  • 3 tbsp extra virgin olive oil
  • 1/2 cup premium tahini
  • 1/4 cup greek yogurt
  • 1 lemon (juiced and zested)
  • 1 clove garlic (minced)
  • 2 tbsp toasted dukkah
  • fresh mint leaves for garnish
  • sea salt to taste
