  • 2 Honeynut squashes halved and seeded
  • 3 tbsp unsalted butter
  • 1 tbsp white miso paste
  • 1 tbsp maple syrup
  • 10 fresh sage leaves
  • 2 tbsp Egyptian dukkah
  • flaked sea salt to taste
  • 1 tbsp extra virgin olive oil

Brush the cut sides of the squash with olive oil and roast face-down on a parchment-lined baking sheet for 25-30 minutes until tender and caramelized.
