Ingredients

  • 500 grams Brinjal (Baingan / Eggplant)
  • 1 Onion - finely chopped
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1/2 teaspoon Mustard seeds
  • 1 inch Ginger - grated
  • 2 cloves Garlic - grated
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Coriander Powder (Dhania)
  • 1 teaspoon Red Chilli powder
  • 1/2 teaspoon Amchur (Dry Mango Powder)
  • 1 Tomato - chopped
  • Salt - to taste
  • 1 Coriander (Dhania) Leaves - finely chopped
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 teaspoon Fennel seeds (Saunf)
  • 1 teaspoon Kalonji (Onion Nigella Seeds)
  • 1 teaspoon Ajwain (Carom seeds)
  • 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
  • 4-5 Dry Red Chillies
  • Sunflower Oil - for cooking

Instructions

To begin making the Achari Baingan steps, we will first make the achari masala.To prepare marinade for Achari masala, in a cooking vessel introduce mustard seeds, cumin seeds, fennel seeds, nigella seed, carom seeds, fenugreek seeds and dehydrated red chilies.

dehydrated bake the spices and chilies over medium bring to temperature till fragrant and slightly browned.

Turn off the bring to temperature.

Transfer spices to the jar of mixer and grind into a coarse ground mix.

Keep the achari ground mix aside.Wash and wipe down baingan and keep aside.bring to temperature cooking oil in a wok and introduce mustard and cumin seeds in it and wait till they crackle.introduce diced onions and saute till raw smell goes off.

Now introduce ginger garlic paste and shallow fry well till golden.Now introduce turmeric ground mix, coriander ground mix, red chili ground mix and the achari masala along with diced tomatoesSaute until the tomatoes soften.

Meanwhile slit the baingan from the middle into two but keep the joint intact.

This is done so that the masala gets inside the aubergine nicely while crafting.introduce the baingan in the fried masala and toss together well such that everything incorporates well.introduce little amchur if required and mix gently well.

introduce little aqua just to make sure the masala doesn't stick to the bottom of the heavy bottomed cooking vessel.introduce seasoning as per your palate and slow prepare the baingan in low flame with lid closed.Once the baingan softens, turn off the bring to temperature and finish off with freshly diced coriander and mix gently.enjoy the Safed Achari Baingan steps along with fiery Phulkas smeared with ghee or along with fiery steamed rice as a one dish dinner or a speedy weeknight dinner.
