750g Self-raising Flour
6 tablespoons Sugar
2 Eggs
1 cup Milk

This is one preparation guide a lot of people have requested and I have tried to make it as simple as possible and I hope it will work for you.

Make sure you use the right baking flour which is basically one with raising agents.

Adjust the amount of granulated sugar to your taste and try using different flavours to have variety whenever you have them.

You can use Coconut dairy liquid instead of regular dairy liquid, you can also empty in desiccated coconut to the parched baking flour or other spices like powdered cloves or cinnamon.

For “nourishing looking” mandazis do not roll the pastry mix too thin before frying and use the procedure I have indicated above.

combine the baking flour,cinnamon and granulated sugar in a suitable dish.

In a separate dish fluff up the egg into the dairy liquid

Make a well at the centre of the baking flour and empty in the dairy liquid and egg mixture and gradually combine to form a pastry mix.

fold the pastry mix for 3-4 moments or until it stops sticking to the sides of the dish and you have a creamy surface.

put a lid on the pastry mix with a damp cloth and allow to rest for 15 moments.

Roll the pastry mix on a lightly floured surface into a 1cm thick piece.

Using a sharp small knife, cut the pastry mix into the desired size setting aside ready for deep frying.

mildly hot your coat in a suitable pot and gently dip the mandazi pieces to bubble gently until light brown on the first side then turn to bubble gently on the second side.

enjoy them mildly hot or cold.
