Ingredients
3 Lbs Goat Meat
2.5 tbsp Jamaican Curry Powder
1/2 tsp Ground Ginger
1/2 tsp All-purpose Seasoning
1/4 tsp Allspice
1 chopped Onion
6 cloves sliced Garlic
3 sprigs Thyme
2 tablespoons Oil
1 1/4 cup Water
1 Scotch Bonnet
1 large Russet Potato
To taste Salt
To taste Pepper

Rinse goat flesh with acidic solution and liquid.

augment the taste goat flesh with 1 ½ tablespoon curry ground mix, all-purpose seasoning, ground ginger, allspice, shallot, garlic cloves, and thyme.

soak for at least 4 hours or up to overnight.

Remove shallot and garlic from goat and set aside.

Set an electric pressure cooker, like an Instant Pot, on high sauté and transfer in cooking oil.

transfer in goat flesh and brown, about 2-3 moments per side.

Remove goat from insert and transfer in 1 tablespoon cooking oil and remaining curry ground mix and sauté for about 10 seconds.

Then transfer in onions and garlic and sauté until softened.

If the onions look parched, transfer in a little liquid and continue to sauté.

transfer in goat and liquid to the pressure cooker and put a lid on the pressure cooker.

make for 40 moments on high pressure.

Allow to naturally release for 10 moments, then release the remaining pressure.

Once all the pressure has been released, open the pressure cooker.

Place on sauté for 10-15 moments, transfer in potatoes and a whole scotch bonnet pepper.

Remove scotch bonnet pepper.
