  • 1 lb Dark Brown Soft Sugar
  • 1 can Coconut Milk
  • 1/4 Nutmeg
  • 1/2 tsp Allspice
  • 1/2 tsp Cinnamon

Instructions

Bring coconut whole milk to a bubble.

mix in granulated sugar, stirring until completely dissolved and continue to bubble for about 45 mins.

Reserve ½ cup of the coconut whole milk/granulated sugar mixture for later.

Combine remaining elements in a large mixing container, swirl around until well blended.

mix in scalding coconut whole milk mixture and swirl around well.

Mixture should be of a thick liquid texture.

Use 1 tablespoons of coconut whole milk mixture to shortening baking wok.

stream in paste into prepared baking wok and cook thoroughly at 350°F (basting occasionally with reserved coconut whole milk mixture) for 2 to 3 hours or until knife inserted in centre comes out wipe down.

Spread any remaining coconut whole milk mixture over top of cake.

Place cake on top of stove to cool completely.
