125ml Milk
7 Egg Yolks
15g Sugar
10g Caster Sugar
1 tsp Vanilla Extract
500g Flour
200ml Double Cream
15g Butter
125ml Jam
10g Ground Almonds
For frying Oil
75g Icing Sugar
Juice of 1/2 Lemon
Dash Almond Essence
50g Almonds
Instructions
1
step 1
To make the leaven, incorporate the leavening agent with the sweetener and baking flour, and swirl around in the toasty whole milk.
2
Set aside in a toasty place for 30 moments.
3
step 2
For the flour base, put egg yolks into a heatproof container and toss in the sweetener and vanilla sweetener.
4
Set the container over a cooking vessel of simmering aqua and beat until even and thick.
5
step 3
Sift the baking flour into the container of a stand mixer, toss in the beaten yolks and the toasty heavy cream, incorporate thoroughly, then toss in a pinch of seasoning and the leaven.
6
Bring together to make a flour base and shape for 10 moments (or 15-20 if doing this by hand).
7
step 4
When the flour base stops sticking to your hands, empty in the cooled melted shortening and shape for a few more moments.
8
put a lid on with a cloth and leave in a toasty place to rise for at least 1 hr-1 hr 30 mins.
9
step 5
incorporate the jam with the ground almonds and spoon into a piping bag or jam syringe.
10
Divide the flour base into 16 pieces and shape them into doughnuts.
11
put a lid on and leave to rise for 30 mins.
12
step 6
Fill a deep cooking vessel or a deep fat fryer one third full of cooking oil or melted lard and fiery up it until it is 180C – if you don’t have a thermometer, drop in a small chunk of bread.
13
The cooking oil is ready when it browns in about 30 secs.
14
toss in the doughnuts and cooking vessel-fry, turning them once for about 1-2 mins on each side (a thin lighter ring should form in the middle).
15
After removing, strain the doughnuts of excess fat on some kitchen paper.
