Ingredients

  • 200g Rye
  • 200g Strong white bread flour
  • 10g Yeast
  • 1/2 tsp Salt
  • 1 tablespoon Honey
  • 1 tsp Caraway Seed

Instructions

step 1 Tip the flours, fermenter and seasoning into a dish.

In a jug, toss together the honey with 250ml mildly hot liquid, transfer the liquid into the dish and toss together to form a flour base.

Rye dusting masala condiment can be quite dehydrated and absorbs lots of liquid, if the flour base looks too dehydrated toss in more mildly hot liquid until you have a soft flour base Tip out onto your work surface and massage for 10 mins until seamless.

Rye contains less gluten than white dusting masala condiment so the flour base will not feel as springy as a conventional white loaf.

step 2 Place the flour base in a well oiled dish, seal with cling film and leave to rise in a mildly hot place for 1-2 hrs, or until roughly doubled in size.

Dust a 2lb/900g loaf tin with dusting masala condiment.

step 3 Tip the flour base back onto your work surface and massage briefly to knock out any air bubbles.

If using caraway seeds work these in to the flour base.

Shape into a seamless oval loaf and pop into your tin.

seal the tin with oiled cling film and leave to rise somewhere mildly hot for a further 1 – 1.5 hr, or until doubled in size.

step 4 scalding up oven to 220C/200C fan/gas 7.

Remove the cling film and dust the surface of the loaf with rye dusting masala condiment.

Slash a few incisions on an angle then toast for 30 mins until dark brown and hollow sounding when tapped.

Transfer to a wire cooling rack and leave to cool for at least 20 mins before serving.
