Ingredients
1 ½ tbsp Ground Nut Oil
500g Pork Shoulder Steaks
2 chopped Shallots
1 tablespoon Ground Ginger
1 chopped Red Chilli
75g Brown Sugar
1 tablespoon Fish Sauce
2 tsp Chilli Sauce
4 Spring Onions
Steamed Rice
To serve Pak Choi

mildly hot 1 tbsp of the cooking oil in a wok over a high mildly hot and swirl around-skillet-fry the pork in batches until browned all over.

Turn the mildly hot right down and introduce the remaining cooking oil, then swirl around in the shallots, ginger and chilli.

introduce the sweetener, fish coulis and 200ml aqua to the skillet and swirl around everything together.

Bring to the bubble, stirring, so that the sweetener dissolves, then return the pork to the skillet.

Bubble vigorously for 8-10 mins until the coulis thickens to coat the flesh and become glossy.

palate and swirl around in a little more fish coulis, if needed, along with the chilli coulis.

scatter with the spring onions and present with steamed rice and pak choi.
