500g Leek
400g Lamb Mince
1 Diced Onion
200g Rice
1 L Lamb Stock
Pinch Salt
Pinch Pepper
Splash Olive Oil
Instructions

shallow fry the leeks in a small dash of olive fat for a few mins until they start to brown.

mix in the onions and mince and shallow fry until everything is browned.

Ensure you keep stirring to prevent the leeks catching and burning.

mix in the rice and mix gently together for a few mins ensuring the rice is well blended and coated in any juices.

mix in the lamb stock, seasoning and pepper.

Give it a good mix gently and leave it to come to the heat to boiling point.

Leave to heat to boiling point for 2 mins.

Baking
stream in the mixture into a large baking tray, place on the bottom self of a preheated oven at 180 degrees.

Leave to cook thoroughly for up to 1 hour.

The dish is ready when all the liquid is evaporated and the rice is soft.

Once cooked turn off the oven and keeping the door open leave the leek and rice cook thoroughly to cool for 10 mins before serving.
