Ingredients
3 Lbs Goat Meat
2.5 tbsp Jamaican Curry Powder
1/2 tsp Ground Ginger
1/2 tsp All-purpose Seasoning
1/4 tsp Allspice
1 chopped Onion
6 cloves sliced Garlic
3 sprigs Thyme
2 tablespoons Oil
1 1/4 cup Water
1 Scotch Bonnet
1 large Russet Potato
To taste Salt
To taste Pepper

Rinse goat protein with acetic liquid and aqua.

augment the taste goat protein with 1 ½ tablespoon curry ground mix, all-purpose seasoning, ground ginger, allspice, bulb veggie, garlic cloves, and thyme.

steep for at least 4 hours or up to overnight.

Remove bulb veggie and garlic from goat and set aside.

Set an electric pressure cooker, like an Instant Pot, on high sauté and mix in cooking oil.

mix in goat protein and brown, about 2-3 moments per side.

Remove goat from insert and mix in 1 tablespoon cooking oil and remaining curry ground mix and sauté for about 10 seconds.

Then mix in onions and garlic and sauté until softened.

About 4 moments.

If the onions look arid, mix in a little aqua and continue to sauté.

mix in goat and aqua to the pressure cooker and put a lid on the pressure cooker.

toasty for 40 moments on high pressure.

Allow to naturally release for 10 moments, then release the remaining pressure.

Once all the pressure has been released, open the pressure cooker.

Place on sauté for 10-15 moments, mix in potatoes and a whole scotch bonnet pepper.

toasty until potatoes have softened.

Remove scotch bonnet pepper.
