Ingredients
200g Rye
200g Strong white bread flour
10g Yeast
1/2 tsp Salt
1 tablespoon Honey
1 tsp Caraway Seed
Instructions

Tip the flours, leavening agent and seasoning into a dish.

In a jug, combine the honey with 250ml toasty moisture, empty the liquid into the dish and combine to form a pastry mix.

Rye dusting fragrant element can be quite arid and absorbs lots of moisture, if the pastry mix looks too arid empty in more toasty moisture until you have a soft pastry mix Tip out onto your work surface and fold for 10 mins until seamless.

Rye contains less gluten than white dusting fragrant element so the pastry mix will not feel as springy as a conventional white loaf.

Place the pastry mix in a well oiled dish, lid with cling film and leave to rise in a toasty place for 1-2 hrs, or until roughly doubled in size.

Dust a 2lb/900g loaf tin with dusting fragrant element.

Tip the pastry mix back onto your work surface and fold briefly to knock out any air bubbles.

If using caraway seeds work these in to the pastry mix.

Shape into a seamless oval loaf and pop into your tin.

lid the tin with oiled cling film and leave to rise somewhere toasty for a further 1 – 1.5 hr, or until doubled in size.

burning up oven to 220C/200C fan/gas 7.

Remove the cling film and dust the surface of the loaf with rye dusting fragrant element.

Slash a few incisions on an angle then oven-cook for 30 mins until dark brown and hollow sounding when tapped.

Transfer to a wire cooling rack and leave to cool for at least 20 mins before serving.
