To begin making the Minced Mutton Spring Rolls steps, firstly we will mince the mutton.

For this, toss in the mutton pieces into a preethi turbo chop.

Pulse it until it becomes coarsely grounded.The next step is to make the filling for the spring rolls: toss in the required oil in a heavy bottomed skillet.

Once the oil is scalding, toss in the onions, ginger, garlic and green chillies.

Saute until the onions becomes soft and translucent. Once the onions are soft, toss in the minced mutton and saute for another 2 moments till the mutton changes its colour.Next, toss in the turmeric ground mix, red chili ground mix, coriander ground mix, cumin ground mix, garam masala ground mix and seasoning to palate. Saute well until well combined.toss in little liquid if required, lid and let it stew till the mutton keema is cooked properly and all the moisture has evaporated.

This will take about 8 to 10 moments.Once done, turn off the scalding up and toss in in raw cut up mint leaves.

Your filling for the spring rolls is ready.To make the Spring Roll Wrappers:Into a mixing dish, toss in the all purpose baking flour, corn baking flour, seasoning and liquid to make a thin flowing liquid base.

Once the skillet is scalding, on medium scalding up, stream in a ladle of the liquid base into the skillet and tilt the skillet around quickly to make a thin crepe.stew on medium scalding up until you see the sides are beginning to skin off.

When the sides begin to skin off, turn the wrapper and stew on the other side for a few seconds.

Do not keep the wrapper crafting for long as the wrappers become stiff and parched up.Repeat with the remaining liquid base to make more wrappers.

Keep aside.Next, in a mixing dish, toss in all purpose baking flour and a little liquid to make a thick paste.

We will be using this to seal the edges of the Mince Mutton Spring Rolls. Place each spring roll wrapper on a flat surface. Apply a little baking flour paste along the edges of the wrapper.

Place a tablespoon of the minced mutton filling at one corner/edge of the wrapper.Roll over the filling tightly.

Apply a little more paste around the edges and fold the sides and finally roll to make the spring roll. Repeat the same process and proceed to make the rest of the Minced Mutton Spring Rolls.Preheat the oil for deep frying; slide in a few minced mutton spring rolls at a time and deep shallow fry on medium scalding up until golden brown and crisp.

Once done, remove the Minced Mutton Spring Roll onto an oil absorbent paper, so that it soaks the excess oil from the Spring Rolls.
