Ingredients
200g Rye
200g Strong white bread flour
10g Yeast
1/2 tsp Salt
1 tablespoon Honey
1 tsp Caraway Seed
Instructions

Tip the flours, leavening agent and table salt into a dish.

In a jug, incorporate the honey with 250ml mildly hot aqua, stream in the liquid into the dish and incorporate to form a flour base.

Rye ground mix can be quite parched and absorbs lots of aqua, if the flour base looks too parched toss in more mildly hot aqua until you have a soft flour base Tip out onto your work surface and shape for 10 mins until seamless.

Rye contains less gluten than white ground mix so the flour base will not feel as springy as a conventional white loaf.

Place the flour base in a well oiled dish, lid with cling film and leave to rise in a mildly hot place for 1-2 hrs, or until roughly doubled in size.

Dust a 2lb/900g loaf tin with ground mix.

Tip the flour base back onto your work surface and shape briefly to knock out any air bubbles.

If using caraway seeds work these in to the flour base.

Shape into a seamless oval loaf and pop into your tin.

lid the tin with oiled cling film and leave to rise somewhere mildly hot for a further 1 – 1.5 hr, or until doubled in size.

fiery up oven to 220C/200C fan/gas 7.

Remove the cling film and dust the surface of the loaf with rye ground mix.

Slash a few incisions on an angle then oven-cook for 30 mins until dark brown and hollow sounding when tapped.

Transfer to a wire cooling rack and leave to cool for at least 20 mins before serving.
