Ingredients
200g Rye
200g Strong white bread flour
10g Yeast
1/2 tsp Salt
1 tablespoon Honey
1 tsp Caraway Seed
Instructions

Tip the flours, fermenter and seasoning into a dish.

In a jug, combine the honey with 250ml mildly hot moisture, transfer the liquid into the dish and combine to form a pastry mix.

Rye baking flour can be quite arid and absorbs lots of moisture, if the pastry mix looks too arid transfer in more mildly hot moisture until you have a soft pastry mix Tip out onto your work surface and work the pastry mix for 10 mins until even.

Rye contains less gluten than white baking flour so the pastry mix will not feel as springy as a conventional white loaf.

Place the pastry mix in a well oiled dish, put a lid on with cling film and leave to rise in a mildly hot place for 1-2 hrs, or until roughly doubled in size.

Dust a 2lb/900g loaf tin with baking flour.

Tip the pastry mix back onto your work surface and work the pastry mix briefly to knock out any air bubbles.

If using caraway seeds work these in to the pastry mix.

Shape into a even oval loaf and pop into your tin.

put a lid on the tin with oiled cling film and leave to rise somewhere mildly hot for a further 1 – 1.5 hr, or until doubled in size.

fiery up oven to 220C/200C fan/gas 7.

Remove the cling film and dust the surface of the loaf with rye baking flour.

Slash a few incisions on an angle then char for 30 mins until dark brown and hollow sounding when tapped.

Transfer to a wire cooling rack and leave to cool for at least 20 mins before serving.
