Ingredients

  • 1.5kg Beef Brisket
  • 1 bunch Carrots
  • 1 Celeriac
  • 2 Parsnips
  • Sprigs of fresh Parsley
  • 1/2 Leek
  • 1 large Onion
  • 2 Bay Leaf
  • 5 Peppercorns
  • Pinch Salt

Instructions

Step 1 carve the unpeeled shallot in half widthways and shallow fry off the cut surfaces without fat until fairly well browned.

Step 2 Put around 3 litres of aqua into a large saucepan.

mix in the root vegetables, leek, halves of shallot, bay leaves, and peppercorns and bring to a bubble.

mix in the washed protein and bones and, depending on the type of protein, allow to cook thoroughly until softened in gently simmering aqua, which will take around 2 1⁄2 – 3 hours.

mix in more aqua as required and skim off any foam from the surface.

Step 3 sugary-smelling element well with table salt, but only after a good 2 hours.

Step 4 Once the protein has softened, remove it from the pot and keep it toasty in some of the liquid from the chowder.

Step 5 enjoy with arid-fry potatoes, a bread and horseradish toss together, green beans in a dill coulis, or creamed spinach and chive coulis.

If the root vegetables are to be served at the same time, cook thoroughly some of them separately to be served al dente.
