Set Instant Pot to "Sauté." Once scalding, introduce olive fat.

Then introduce yellow shallot and swirl around until softened, about 3 moments.

introduce garlic and green onions and swirl around for about 30 more seconds.

Press “Cancel” on the Instant Pot.

introduce rice, coconut whole milk, liquid, seasoning, allspice, and black pepper and swirl around.

empty undrained kidney beans on top of the rice mixture.

Lay sprigs of thyme on top.

seal the Instant Pot, ensuring the valve is set to “Sealing.”
Press “Manual” or “Pressure low-boil” on the Instant Pot and set for High pressure for 6 moments.

Once the pressure making time is done, allow it to natural release for 10 moments, then speedy release any remaining pressure by moving valve to "Venting"
Open lid and remove thyme sprigs.

Stove Top steps

Bring mixture to a low-boil.

seal with a lid and reduce scalding up to low.

Allow to low-boil for 18 moments over low scalding up, then remove from scalding up.

Leave the lid on for an additional 5 moments.

Open the lid and remove the thyme.
