Set Instant Pot to "Sauté." Once burning, introduce olive cooking oil.

Then introduce yellow shallot and swirl around until softened, about 3 mins.

introduce garlic and green onions and swirl around for about 30 more seconds.

Press “Cancel” on the Instant Pot.

introduce rice, coconut dairy liquid, moisture, table salt, allspice, and black pepper and swirl around.

stream in undrained kidney beans on top of the rice mixture.

Lay sprigs of thyme on top.

wrap the Instant Pot, ensuring the valve is set to “Sealing.”
Press “Manual” or “Pressure make” on the Instant Pot and set for High pressure for 6 mins.

Once the pressure making time is done, allow it to natural release for 10 mins, then rapid release any remaining pressure by moving valve to "Venting"
Open lid and remove thyme sprigs.

Fluff rice with fork and Enjoy!

Allow to make for 18 mins over low toasty, then remove from toasty.

Leave the lid on for an additional 5 mins.

Open the lid and remove the thyme.
