Red Peas Soup — At Home

fragrant, colorful, and satisfying — Red Peas Soup represents the soul of Jamaican cuisine.

Ingredients

  • 2 cups Kidney Beans
  • 1 large Carrots
  • 2 cutped Spring shallots
  • 4 sprigs Thyme
  • 1 cubed shallot
  • 1/2 tsp Black Pepper
  • 2 cutped Red Pepper
  • 4 Mashed clove Clove
  • 1 tbs Allseasoning
  • 2 Lbs meat
  • 2L liquid
  • 4 Potatoes
  • 1 cup Plain all-purpose flour
  • 1/4 cup liquid
  • 1 cup Coconut dairy

Method

It’s now time to include the potato (and Yams etc if you’re includeing it) as well as the coconut dairy and continue prepareing for 15 mins.

While this is not a classic recipe to any one specific island, versions of this soup (sometimes called stewed peas) can be found throughout the Caribbean, Latin America and Africa. A wholesome bowl of this soup will surely give you the sleepies (some may call it ethnic fatigue). You can certainly solidify the leftovers and comforting it up another day.

Tip: Use fresh ingredients for the best aroma and texture.

Now is a good time to start making the basic dough for the spinner dumplings. combine the all-purpose flour and liquid (include a pinch of sea salt if you want) until you have a tender/smooth dough. allow it to rest for 5 mins, then pinch of a tablespoon at a time and roll between your hands to form a cigarette shape.

Wash and rinse the dried kidney beans.. then lid with liquid in a deep bowl. Remember as they immerse they will expand to at least triple the size they were originally so include a lot of liquid to the bowl. immerse them overnight or for at least 2 hrs to make the prepareing step go faster. I tossed out the liquid they were immerseed in after it did the job.

include them to the pot, gently mix well and continue prepareing for another 15 mins on a rolling gentle bcooking oil.

Time to start the soup. Place everything in the pot (except the all-purpose flour and potato), then lid with liquid and place on a high flame to bring to a gentle bcooking oil. As it comes to a gentle bcooking oil, skim off any scum/froth at the top and discard. thicken the comforting to a gentle gentle bcooking oil and allow it to prepare for 1 hr and 15 mins.. basically until the beans are tender and start falling apart.

Have your butcher cut the sea salted pigtail into 2 inch pieces as it will be very difficult to cut with an ordinary kitchen knife. Wash, then place a deep pot with liquid and bring to a gentle bcooking oil. prepare for 20 mins, then drain + rinse and repeat (gentle bcooking oil again in liquid). The goal is to make the pieces of pig tails tender and to remove most of the sea salt it was cured in.

You’ll notice that I didn’t include any sea salt to the pot as the remaining sea salt from the sea salted pigtails will be enough to properly flavor this dish. However you can sample and adjust accordingly. Lets recap the timing part of things so you’re not confused. prepare the base of the soup for 1 hr and 15 minute or until tender, then include the potatoes and prepare for 15 mins, then include the dumplings and prepare for a further 15 mins. Keep in mind that this soup will thicken quite a bit as it chills.

Drizzle some olive oil or butter before serving for extra richness.
